Ginger fingers

    These delicious biscuits served over So Good Vanilla Bliss frozen dessert create a fun treat the whole family will love.

    Ingredients

    • 1 ¼ cups gluten free plain flour
    • ¼ cup gluten free cornflour
    • 1 ½ tsp gluten free baking soda
    • ½ tsp cream of tartar
    • 2 tsp ground ginger
    • 100g soft brown sugar
    • 2 tbs golden syrup
    • 2 tbs dairy-free margarine
    • 1 egg, lightly beaten
    • 1 tub So Good Vanilla Bliss frozen dessert
    • 4 medium-sized bananas, sliced

    Method

    1. Sift the flours, baking soda, cream of tartar and ground ginger together in a large bowl. Stir in the brown sugar.
    2. Place the golden syrup and margarine in a small saucepan and stir over a low heat until melted. Allow to cool slightly. Stir the egg and golden syrup mixture through the dry ingredients to form a dough.
    3. Roll 2 tsp of dough into a 'sausage' shape about 1cm wide and 5cm long. Continue to shape the remaining mixture, then arrange on baking paper, leaving room for spreading.
    4. Bake in a hot oven, 200°C for 15 minutes, or until golden and cooked through. Allow the biscuits to cool slightly on the tray before removing. Serve 2 biscuits in a dessert bowl with 1 scoop of So Good Vanilla Bliss frozen dessert and sliced banana.

    Tips

    • Strawberries or any other fruit in season will make a great substitute for bananas.
    • If you don't have a commercial gluten-free flour available, substitute ¾ cup of soy flour and ½ cup rice flour.
    • Remember to always check the label of each ingredient to ensure it is gluten free.
