- 1 cup black rice
- 3 cups water
- 4 cups water, extra
- 400g can coconut milk, reduced fat
- 1 tablespoon honey
- ½ teaspoon vanilla
Coconut black rice summer porridge

Method
- Soak rice overnight in water. Rinse and drain.
- Place soaked rice and extra 4 cups water in a saucepan. Bring mixture to the boil, then reduce heat and simmer for 20 minutes, stirring every few minutes.
- Add remaining ingredients and simmer for further 10 minutes.
- Garnish with nuts, seeds and fruits of choice. Serves 6.
Tips
- Can be served hot or cold. Great summer breakfast idea.
- Black rice is readily available in the supermarket. Soaking the rice overnight reduces the cooking time. If you do not soak the rice it will need longer cooking time.
