Apple and Blueberry Tartlets

Ingredients

  • 1 x 800g can pie apple or stewed apple
  • 300g frozen blueberries
  • 1 tablespoon sugar
  • 6 sheets ready rolled wholemeal short crust pastry
  • 1 egg, lightly beaten
  • 1 tablespoon icing sugar, extra

Method

  1. Combine apple, berries and sugar. Using a plate as a guide, cut a 20cm round from each pastry sheet and place on lightly greased oven trays.
  2. Divide mixture between the six pastry circles, leaving a 4cm edge around filling. Using your hands, bring the 4cm edges together to partially enclose filling.
  3. Brush pastry with egg and sprinkle with extra sugar. Bake in a hot oven, 200°C, for 20 minutes or until pastry is lightly browned.
