Baked Pear Custard

Baked Pears

Ingredients

  • 2 pears, thinly sliced
  • 1/3 cup castor sugar
  • 2 teaspoons custard powder
  • 4 eggs
  • 1 teaspoon vanilla essence
  • 2 cups Sanitarium So Good Lite soymilk, heated
  • yoghurt to serve

Method

  1. Arrange pears over base of lightly greased ramekin dishes.
  2. Combine sugar and custard powder, then whisk in eggs and vanilla. Gradually add hot So Good to egg mixture. Pour egg mixture over pears.
  3. Bake in a slow oven, 150°C, for 1 hour or until set. Serve with yoghurt.

Tips

  • Pears ripen after picking and should be kept at room temperature until their skin begins to change colour. Once pears are ripe they should be stored in the refrigerator and be used as soon as possible.
  • Please note that most of the sugars in this recipe are naturally from the fruit.
