Banana Split Pea Panckaes

Ingredients

  • ½ cup yellow split peas, soaked in water overnight
  • 1 cup white plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 2 tablespoons soft brown sugar
  • ¾ cup Sanitarium So Good Lite soymilk
  • 2 eggs
  • 1 large banana, diced
  • 2 teaspoons margarine

Method

  1. Drain the split peas and blend in a food processor until smooth. Add the flour, baking powder, cinnamon, brown sugar, So Good and eggs, and blend to form a thick batter. Gently stir in a diced banana.
  2. Heat the margarine in a non-stick frying pan, pour in 2 tablespoons of the mixture and swirl evenly over the base. Cook for 2 minutes, or until bubbles appear on the surface. Turn over and cook until golden. remove, cover with a tea towel and keep warm.
  3. Continue with the remaining batter to make 12-15 pancakes. Dust with icing sugar and serve with Sanitarium So Good Bliss ice-cream alternative, if desired.

Tips

  • Slice fresh bananas, strawberries or other fruit on top to add a healthy garnish.
