Ingredients

  • 2/3 cup wholemeal plain flour
  • 2/3 cup plain flour
  • 1 cup rolled oats
  • 1/3 cup brown sugar
  • ½ cup sultanas
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 3 ripe bananas, mashed
  • ¼ cup soymilk
  • 1 whole egg
  • 1 egg white

Method

  1. Pre-heat oven to 180ºC. Line a 20cm x 30cm lamington tin with baking paper.
  2. Mix together flours, oats, sugar, sultanas, baking powder and cinnamon.
  3. Beat banana, soymilk, egg and egg white and add to dry mixture. Mix well.
  4. Place into prepared tin and bake for 40 minutes or until cooked. Cool then cut into bars.
