Banana Weet-Bix Pancakes with Chestnut Topping

Ingredients

  • 2 Sanitarium Weet-Bix, crushed
  • 1 cup wholemeal plain flour
  • 1/3 cup caster sugar
  • 1 cup Sanitarium So Good Lite soymilk
  • 1 ripe banana, mashed
  • oil spray, to cook
  • 1/2 cup chestnuts, shelled
  • 2 tablespoons margarine
  • 2 tablespoons brown sugar
  • 2 tablespoons lemon juice

Method

  1. Place Weet-Bix, flour and caster sugar in a mixing bowl.
  2. Add So Good and banana and mix well.
  3. Heat a non-stick frying pan until almost hot. Spray with oil and add a heaped tablespoon of mixture. Cook for 1-2 minutes then turn over and cook briefly. Repeat with remaining mixture

Topping:

  1. Place chestnuts in a saucepan of boiling water. Cook for 10 minutes, drain and then remove the brown skin and chop.
  2. Combine margarine, brown sugar and lemon juice in a saucepan. Cook gently on a medium heat for approximately 2-3 minutes, stirring occasionally until sugar is dissolved and mixture is like a syrup.

Tips

  • Use a small, sharp knife to remove the hard outer shell of chestnuts.
