Berry Soda

Ingredients

  • 150g frozen raspberries
  • 200mls cranberry juice
  • 1/2 lemon, juice only
  • 1 ½ tablespoon icing sugar
  • ice cubes

Method

  1. 1 bottle soda water (300ml per glass)
  2. Puree raspberries, lemon juice, icing sugar and cranberry juice.
  3. Divide amongst glasses, add ice cubes, top with soda and stir to combine.
  4. Garnish with mint/lemon slices

Tips

  • Raspberries are rich in vitamin C. Vitamin C is important for wound healing and promotes resistance to infection. It also aids in the absorption of iron from plant sources.
  • Fresh raspberries can also be used for this recipe and can be purchased through summer and autumn in the fruit section of your supermarket.
  • Cranberry juice can provide a useful source of iron in a vegetarian diet.
