Ingredients

  • 2 large tomatoes, sliced
  • 4 thick slices of multigrain country-style bread (8 if you prefer a closed sandwich)
  • low-salt margarine to spread
  • 8 crispy lettuce leaves
  • 1 teaspoon olive oil
  • 8 Vegie Delights Bacon Style Rashers

Method

  1. Spread bread with margarine, top each slice with two 2 lettuce leaves and tomato slices.
  2. In a frying pan, cook rashers with olive oil for one minute each side.
  3. Place two hot rashers of top of salad.
  4. Cover with second slice of bread for a closed BLT sandwich.
