Club Sandwiches

Club sandwiches are a favourite. And the combination of mutligrain and wholegrain breads makes them even more nutritious.

Ingredients

  • 6 slices of sandwich bread, wholemeal or rye
  • 6 slices of sandwich bread, multigrain
  • 200g ricotta, reduced-fat
  • 3 large lettuce leaves
  • 12 thin slices of cucumber
  • 1 tomato, sliced
  • a few basil leaves
  • 1 pkt Vegie Delights Smoked Deli Luncheon, cut into very thin slices
  • Cocktail olives, cocktail onions and caper berries (optional)

Method

  1. Spread half of the ricotta over 3 slices of wholemeal or rye sandwich bread, line with lettuce leaves and slices of Vegie Delight Smoked Deli Luncheon and top with remaining 3 slices of bread.
  2. Line 3 slices of multigrain sandwich bread with cucumber, tomato, basil leaves and Vegie Delight Smoked Deli Luncheon and top with remaining 3 slices of bread.
  3. Cut each sandwich into four triangles and arrange on a plate, alternating between the 2 types of sandwich.
  4. If desired, secure sandwiches 2 at the time with toothpick and a cocktail olive, onion or caper berry. Serve.
