Fusilli with Spinach and Vegie Sausage

Fusilli with Spinach

Ingredients

  • 200g frozen spinach, defrosted and squeezed to remove excess moisture
  • 4 Vegie Delights Vegie Sausages, sliced into pieces
  • 200 ml Italian tomato sauce (passata)
  • 2 tbsp olive oil
  • 1 garlic clove, crushed
  • 400g fusilli pasta

Method

  1. Saute garlic in olive oil, adds sausage slices and Italian tomato sauce. Cook for one minute, stirring constantly. Add the spinach and stir through till heated. Set aside.
  2. In the meantime, cook pasta according to packet instructions.
  3. Drain the pasta. Stir the spinach and sausage mixture through hot pasta and serve.
