Butter beans with rocket - Greek style

    This hearty rustic dish makes an easy, satisfying meal. High in fibre, protein and iron it’s full of bold Mediterranean flavours the whole family will love.

    Ingredients

    • 1 tbs olive oil
    • 1 large red onion, halved and cut into thin wedges
    • 3 garlic cloves, thinly sliced
    • 690g jar tomato passata sauce
    • 4 vine-ripened tomatoes, peeled, chopped and seeds removed
    • 2 x 400g cans butter beans, rinsed and drained 
    • 1/2 cup flat-leaf parsley, chopped
    • 2 tbs oregano leaves, chopped
    • 50g wild rocket leaves
    • 1/3 cup finely grated pecorino, parmesan or feta cheese
    Grilled garlic bread
    • 6 slices crusty wholegrain bread
    • olive oil
    • 2 garlic cloves, crushed

    Method

    1. Heat oil in a large deep saucepan over medium heat. Add red onion and garlic. Cook, stirring often, for 3-4 minutes until tender. Add tomato sauce, tomatoes, beans and herbs. Cover and gently bring to the boil. Season to taste.
    2. Just before serving toss through rocket. Sprinkle with cheese.
    3. To make garlic bread, combine the oil with crushed garlic, then spread evenly over the wholmeal bread.  Cook under a medium grill until golden.
    4. Serve beans with grilled garlic bread, or rice.

    Tips

    • Use turkish bread as an alternative to the garlic bread. Warm in the oven until just crisp on the outside.
    • If you don't have butter beans any type of beans such as lima beans, black beans or kidney beans would work well in this dish.
