Lime & Poppy Seed Muffins

Ingredients

Muffin Base

  • 125g margarine
  • 1/2 cup sugar
  • Rind of 1 lime
  • 1/3 cup lime juice
  • 1 cup wholemeal self raising flour
  • 3/4 cup white self raising flour
  • 2 tablespoons poppy seeds
  • 2 eggs

Syrup

  • 1/2 cup sugar
  • 1/4 cup lime juice
  • 1/2 cup water

Method

  1. Combine margarine, sugar, rind and juice in a saucepan and stir over low heat until margarine is melted and sugar dissolved. Remove from heat.
  2. Sift flour and poppy seeds into a bowl. Add husks back to flour. Add margarine mixture and eggs to dry ingredients and mix until just combined. Place mixture into greased muffin tins and bake in a moderate oven (180°C) for 20 minutes.
  3. Combine syrup ingredients in a saucepan and stir over low heat until sugar is dissolved. Increase heat and simmer for 3 minutes.
  4. Slowly pour hot syrup over the hot muffins while still in tray.

Tips

  • This recipe can be made with lemons in place of limes.
  • These muffins also taste great without the syrup if you'd prefer a low-calorie option.
