Rhubarb and Berry Compote

Ingredients

  • 1 bunch rhubarb, cut into 2cm lengths
  • 3 green apples, peeled, cored and chopped
  • 1 punnet strawberries, hulled and halved
  • ΒΌ cup sugar
  • 1 cup frozen blueberries

Method

  1. Combine rhubarb, apple, strawberries and sugar in a saucepan.
  2. Cover and simmer over low heat for 8-10 minutes or until rhubarb and apple is tender.
  3. Sprinkle with thawed blueberries and serve.

Tips

  • This fruit mixture can be used as a pie filling, under a crumble, over breakfast cereal, with low fat yoghurt or Sanitarium So Good Bliss Frozen Dessert ice-cream alternative.
