Roasted potato and red onion pizza

Ingredients

  • 1 medium red onion, thinly sliced 
  • 2 medium potatoes, peeled and thinly sliced 
  • 1 small kumara, peeled and thinly sliced 
  • 2 tablespoons olive oil 
  • 26cm pizza base 
  • ⅓ cup tomato paste 
  • 1 clove garlic, chopped 
  • 1 cup grated reduced-fat cheese 
  • Fresh rosemary 
  • ½ teaspoon salt (optional)

Method

  1. Place onion, potato and kumara in a baking tray and toss with oil. Bake in a hot oven at 200°C for 20 minutes, turning occasionally, until onion is soft and potato lightly browned. 
  2. Place pizza base on a tray. Spread with tomato paste, sprinkle with garlic, half the cheese and the rosemary. Top with the potato mixture. 
  3. Sprinkle with salt and remaining cheese. Bake in a hot oven at 200°C for 15-20 minutes or until cheese is melted and pizza base crisp. Serves 4 (cuts into 8 slices).

Tips

  • Fresh and dried herbs make a great alternative to salt in cooking, plus they supply a range of protective antioxidants. Replace salt with ground spices and lemon juice too.
