Strawberry and Lime Syrup Crepes

Ingredients

  • 2 eggs
  • 1½ cups So Good soymilk
  • 2/3 cup water
  • 1 ¼ cups white plain flour
  • ½ cup wholemeal plain flour
  • olive oil spray
  • ½ cup honey
  • Juice and grated rind from 3 limes
  • 2 x 250g punnets strawberries, hulled and halved

Method

  1. In a large mixing bowl whisk eggs, So Good soymilk and water. Gradually whisk in the flours until smooth.
  2. Heat a large non-stick frypan over a moderate heat and lightly spray with olive oil. Pour 1/3 cup of the crepe batter into the pan and tilt the pan to spread the crepe mix. Cook for about a minute each side or until golden brown. Set aside and continue cooking the remaining crepe mix. Spray the pan with extra olive oil spray as required.
  3. In a small saucepan combine the honey, lime juice and lime rind. Warm over low heat for about 2 minutes to form a syrup. Add the strawberries and remove from the heat.
  4. To serve, fold the crepes into quarters and top with the strawberries in lime syrup. Serves 6.

  • Limes are generally available all year round. When choosing, select a lime with thin, shiny skin that is firm and heavy for its size. Limes are best stored at room temperature for about a week. They can be refrigerated for extended storage.
