Ingredients

  • 700g Desiree potatoes, unpeeled and cut into quarters 
  • 1 tablespoon olive oil 
  • 2 leeks, sliced 
  • 2 cloves garlic, crushed 
  • 2 ½ packets of Sanitarium Vegie Delights Bacon Style Rashers, diced 
  • 3 carrots, diced 
  • 3 courgette, diced 
  • 1 cup frozen peas 
  • 2 tablespoons wholemeal plain flour 
  • 1 ½ cups Sanitarium So Good Lite soymilk 
  • ½ cup ricotta cheese 
  • ¼ cup water 
  • 1 tablespoon rosemary leaves

Method

  1. Place potatoes in a large saucepan of water and bring to the boil. Reduce heat and simmer for 15 minutes or until soft. 
  2. Heat oil in a non-stick frying pan. Add leeks, garlic, Vegie Delights, carrot, zucchini and peas and sauté for 3-5 minutes. Add flour and cook over medium heat for a further minute. 
  3. Add So Good and bring to the boil, then pour mixture into 6 individual casserole dishes or one large 8 cup capacity casserole dish. 
  4. Drain potatoes, mash and mix through ricotta, water and rosemary. Place on top of casserole mixture.


Tips

  • This pie can be made in advance, refrigerated and heated at 200°C for 30mins. 
  • For a crunchy topping, spray the potato with oil and bake at 200°C for 20mins. 
  • If you don't like your mashed potato with the peel, peel potatoes before cooking.
