Mex fest vegan taco

  • 1 can black beans
  • 1 vine ripened tomato, chopped
  • 1 tbsp olive oil
  • 1/2 red onion chopped
  • 1 clove garlic finely chopped 1/2 red capsicum chopped
  • 1 tbsp Mexican spice mix (see below)
  • 1/2 cup grated vegan The Alternative Dairy Co. cheddar cheese
  • 1 cup coriander leaves
  • 1 lime
  • 8 hard taco shells
Mexican spice mix
  • 2 tsps ground cumin
  • 1/4 tsp chilli powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder

  1. Heat olive oil in a small frypan on medium. Add onion, garlic and spice mix. Fry for 5 minutes.
  2. Add beans and fry for a further 5 minutes.
  3. Heat hard taco shells according to the directions on pack.
  4. To serve, add the bean mix to the taco shell, then add coriander, tomato, onion and finish with cheese.
  5. Squeeze fresh lime and serve straight away
