This easy to make treat is dairy and gluten free and makes an excellent Easter special occasion food.
  • 1/2 cup cacao butter, melted
  • 3/4 cup Sanitarium™ peanut butter
  • 1/4 cup honey
  • 1/4 cup cacao
  • 1/2 cup raw buckwheat
  • 1/2 cup dried cranberries
  • 1/4 teaspoon salt

  1. Place cacao butter in a glass bowl and place over simmering water in saucepan. Heat until just melted.
  2. Combine all ingredients in a large bowl, but reserve 1 tablespoon each of buckwheat and cranberries.
  3. Pour into a lightly greased 19cm x 29cm lamington slice tin. Sprinkle with reserved buckwheat and cranberries.
  4. Place into refrigerator to set. Cut into bite size pieces. Makes 40.
