Pineapple and almond breakfast couscous

High in fibre and low in salt, this breakfast is a great way to awaken the tastebuds and power you through the morning!
  • 1 cup pineapple juice
  • 1 cup couscous
  • ½ cup fresh pineapple, chopped
  • ½ cup dried apricots, diced
  • ¼ cup almond kernels, chopped
  • 1 cup low fat yoghurt

  1. Bring pineapple juice to the boil in a jug in the microwave.
  2. Place couscous in a heatproof bowl and pour over boiling pineapple juice. Stir to combine.
  3. Stand for 5 minutes or until liquid is absorbed.
  4. Fold pineapple, apricots and almonds through couscous.
  5. Serve with yoghurt and garnished with fresh mint.

Tips

  • For some extra sweetness add ¼ cup of plump sultanas when adding other fruit.
