Vanilla apricot and date porridge

  • ¾ cup rolled oats
  • 2 cups soy or dairy milk
  • 12 dried apricots, chopped
  • 8 whole dates, pitted and chopped

  1. Combine oats, milk, apricots and dates in a saucepan and bring to the boil, stirring continuously.
  2. Simmer for 10 mintes, stirring occasionally.
  3. Serve with extra milk if desired and fruit of your choice.
