Vegetable rice patties

  • 1 tablespoon olive oil 
  • 1 onion, chopped 
  • ½ cup chopped mushrooms 
  • 1 courgette, grated 
  • 1 carrot, grated 
  • 250g cottage cheese 
  • 3 cups cooked cold rice 
  • 2 eggs 
  • ½ cup toasted breadcrumbs

  1. Saute onion in oil until soft. Add mushrooms, courgette and carrot and cook until soft. 
  2. Mix cottage cheese, rice and eggs in a bowl and add vegetables. 
  3. Press 1 tablespoon of mix into patties and roll in breadcrumbs. Heat a little oil in pan and cook patties on each side until golden brown.

Tips

  • These patties are great when entertaining because they are so quick and healthy. 
  • Substitute feta cheese for cottage cheese for a different flavour. You may need to add a little more oil to help the mixture stick together if you use feta.
